Peach Bellini Pop || Cocktail Series

It was hot this week. So hot, all I want to do is site around and eat popsicles and let the heat slowly melt me into a puddle.  My dog, who is has more energy than I thought possible, now lays on the floor not moving so that means we are all feeling it in the house. To cool down (me, not the dog) I made popsicles. 

Popsicles are summer to me. They are the perfect snack. So I figured, why not make them boozy.  Just to be warned, because they contain alcohol, they will melt faster than your typical pop. So I suggest either eating fast, or take a bowl.  

Peach Bellini Pop

 
  • 3 peaches
  • 4 oz simple syrup
  • 4 oz lemon juice
  • 2 1/3 cups of sparkling wine
  • Blend peaches to puree. In a bowl, strain puree through fine mesh. Then add simple syrup and lemon juice and mix. Mix in wine. This last step takes a bit of time, because you have to wait for the bubbles/foam to calm. Then pour into popsicles molds. Freeze until solid.
